Yield: 15 cookies
Method
- Preheat oven to 170°C, 375 F, Gas Mark 3.
- Using a hand mixer, cream together the butter, sugar and vanilla extract in a large bowl until pale and creamy.
- Add the flour and salt and mix until it forms a firm paste.
- Roll paste into a sausage and cut into 15 equal slices. Shape each slice into a ball and pat out until it’s 1cm thick, then place on lightly oiled tray. Using a fork, press the choc eggs/smarties on top of each cookie.
- Bake for 20 minutes until golden. Allow to cool to become crisp.

150g Mortons Plain Flour
100g softened butter
50g caster sugar
1 tsp vanilla extract
Generous pinch of salt
100g mini chocolate eggs or Smarties, crushed
