Method
- Preheat oven to 220C, 425 F, Gas Mark 7.
- Dust baking tray with plain flour.
- Mix the soda bread flour, salt, and 50g of the cheese in a large bowl.
- In a measuring jug, stir together the yogurt, oil, egg, and mustard, if using. Pour onto the flour mix.
- Stir ingredients together until they become a soft elastic dough.
- Turn dough onto a board dusted with flour. Form a large rectangle roughly A4 in size and 1cm thick.
- Brush dough with the melted butter and sprinkle over the remaining cheese. Roll up the dough into a spiral.
- Slice into 10 smaller spirals of around 3 cm thick and place in a circle on the baking tray so that they’re touching.
- Bake for 15 minutes until cheese is melted and the bread is golden on both sides. Serve warm drizzled with chilli sauce.

250g Mortons Soda Bread Flour
Generous pinch of salt
150g grated cheese (preferably a red cheddar and mozzarella mix)
125ml natural yogurt or buttermilk
2 tablespoons vegetable oil
1 egg, beaten
1 teaspoon mustard (optional)
25g melted butter
Plain flour for dusting
